Eli Mondragon — Finca La Lima Geisha

Cajamarca, Peru · Washed

High in the mountains of San Ignacio in Cajamarca, coffee grows beneath cool Andean skies and mineral-rich soil. At these elevations, cherries ripen slowly, developing the clarity and refined aromatics that make Geisha one of the most prized varieties in the world.

This lot was produced by Eli Mondragon at his farm Finca La Lima, a small high-altitude plot where coffee farming is carried out with careful attention to harvest and processing. Farms in this region are typically family-run, where each stage — from picking ripe cherries to drying the coffee — is managed by the producer.

The coffee is processed using the washed method, allowing the purity of the variety and terroir to show clearly in the cup. After harvest, cherries are selectively hand-picked, depulped, fermented to remove the mucilage, then fully washed before drying slowly until the coffee reaches stable moisture.

In the cup, the profile is refined and elegant. Lilac florals rise gently in the aroma, followed by the deep sweetness of plum. Beneath the fruit sits a soft panela sugar note that adds warmth and length to the finish.
