In the hills of Yirgacheffe, coffee grows slowly among shade trees and small family farms. The region is known for producing some of Ethiopia’s most aromatic coffees, where altitude, fertile soil, and careful harvesting bring extraordinary clarity and fruit expression.
This lot comes from Koke, an area long celebrated for vibrant Ethiopian profiles. Coffee here is typically grown on small garden farms before cherries are delivered to local washing stations for careful sorting and processing.
The coffee is produced using a Supernatural process, an extended natural method designed to intensify fruit character while preserving clarity. Only perfectly ripe cherries — measured for high sugar content — are selected before drying begins.
After harvest, the cherries are carefully hand-sorted and placed on raised drying beds. In the early stages of drying they are spread thin and turned frequently to control fermentation. During the evenings they are often covered to slow the process and allow gentle overnight fermentation. The coffee continues drying gradually over two to three weeks, allowing the fruit sugars to deeply infuse the seed.
In the cup, the profile is vibrant and expressive. Ripe berries and juicy stone fruit lead the flavour, lifted by wild floral aromatics and a rich natural sweetness that carries through the finish.
