High in the hills of Gedeb, in Ethiopia’s famed Yirgacheffe region, coffee grows among small garden farms scattered across the mountains. At 1,900–2,100 meters above sea level, the cool altitude allows cherries to ripen slowly, building the complex sweetness and vibrant acidity that make Ethiopian coffees so distinctive.
This lot is processed at the Chelchele washing station, where smallholder farmers from surrounding villages deliver freshly harvested cherries during the harvest season. The region is known for producing coffees with vivid fruit character and elegant floral aromatics.
The coffee is processed using the natural method, where whole cherries are dried intact on raised African beds under the sun. As the fruit slowly dries around the seed, sugars and fermentation compounds infuse the coffee, creating deeper sweetness and a fuller body.
In the cup, the profile is lush and expressive. Peach-like fruit leads with soft sweetness, followed by jammy fruit notes that add richness to the cup. Bright malic acidity gives the coffee a juicy structure, while gentle floral aromatics lift the finish.
The result is a vibrant Ethiopian natural — fruit-driven, aromatic, and beautifully expressive.
