High in the mountains of Colombia, coffee farming is often deeply personal — small farms, careful harvests, and producers who know every tree on their land.

This lot was grown by Rigoberto Chavarro, a dedicated Colombian producer cultivating the sought-after Pink Bourbon variety. Known for its refined aromatics and vivid fruit clarity, Pink Bourbon has become one of Colombia’s most celebrated cultivars, producing cups that feel both elegant and expressive.

After harvest, ripe cherries are selectively hand-picked and depulped, then processed using the traditional washed method. Fermentation removes the remaining mucilage before the coffee is fully washed and dried slowly to stabilize the sugars and structure of the cup.

In the cup, the profile is sweet and vibrant. Brown sugar sweetness provides a warm foundation, followed by the playful fruit character of wine gum and soft notes of candied stone fruit. The result is a cup that feels lively, smooth, and beautifully balanced.
