Popayán — Cauca

In the highlands of Cauca, coffee grows on a plateau surrounded by the Andes mountains. The region around Popayán is known for its stable climate — warm days, cool nights, and mineral-rich volcanic soil that allow coffee cherries to mature slowly and evenly.

Grown at approximately 2,050–2,100 meters above sea level, the altitude gives the coffee density and vibrant acidity while preserving the natural sweetness of the fruit.

This lot is produced by smallholder farmers from the Popayán region, where coffee farms are often small, family-run plots scattered across the mountainsides. The combination of elevation, climate, and careful cultivation has made Cauca one of Colombia’s most respected coffee-growing regions.

In the cup, the profile is balanced and approachable. Tangerine citrus brings brightness to the opening sip, followed by smooth layers of caramel and molasses sweetness. As the coffee cools, soft stone fruit notes appear, finishing with a gentle touch of milk chocolate.

After harvest, ripe cherries are depulped and fermented to remove the mucilage, then fully washed before being dried slowly on raised beds or patios until the coffee reaches stable moisture. This traditional washed process highlights the clarity and sweetness that define coffees from Cauca.
