This lot comes from Candelaria Sarango Santos, who grows coffee on her farm Tres De Mayo in the San Ignacio area of Cajamarca, northern Peru. Coffee farming here is a family tradition, passed down through generations, where careful harvesting and simple, precise processing allow the character of the land to show clearly in the cup.
The profile is vibrant and refreshing. The first sip reveals crisp green apple acidity, followed by the gentle sweetness of red cherry. The cup feels bright, juicy, and clean, with a lively structure that makes each sip feel effortless.
After harvest, ripe cherries are selectively hand-picked and depulped shortly after picking. The coffee undergoes controlled fermentation before being fully washed, then dried slowly on raised beds for roughly two to three weeks until the parchment reaches stable moisture.
The result is a coffee that feels classic and beautifully transparent — the kind of washed profile that reminds you how satisfying simplicity can be.
